Chicken Barbecue And Slaw Sandwiches

Homemade barbecue sauce of ketchup, vinegar, onion, garlic, chili powder and hot sauce, poured over baked chicken breasts, and served on gourmet hamburger buns. Homemade cole slaw completes the dish.
Ingredients -
3 Boneless, Skinless, Chicken Breasts

Sauce:
1 cup Ketchup
1/2 cup Apple Cider Vinegar
1/4 cup Onion, minced
2 cloves Garlic, minced
2 teaspoons Chili Powder
1/2 teaspoon Hot Pepper Sauce

Slaw:
4 cups Cabbage, thinly sliced or chopped
1/2 cup Mayonnaise
2 tablespoons Yellow Mustard
1 1/2 tablespoons Apple Cider Vinegar
1/2 teaspoon Celery Seeds
1/4 teaspoon Sea Salt
1/4 teaspoon Fresh Ground Pepper
4 Large Hamburger Buns

 
Preparation:

1. Preheat oven to 325 F.

2. Place chicken breasts in glass casserole dish.

3. Sauce:
4. Combine ketchup, vinegar, onion, garlic, chili powder and hot sauce in small bowl. Whisk to combine.

5. Pour sauce over chicken breasts. Coat both sides.

6. Bake 45 minutes.

7. Slaw:
8. Add cabbage, mayonnaise, mustard, vinegar, celery seeds, salt and pepper to large bowl. Stir to combine. Chill until ready to use.

9. Shred chicken.

10. Place shredded chicken on open hamburger buns. Top with coleslaw. Serve immediately.
